It’s 2020! Hip Hip Hooray! That means it’s time to throw a party to celebrate the start of a new decade! But when you do, you’ll be hit with the reality that everyone is trying to start the year off right with a healthier diet. This can make being a host a little bit tricky. Potato chips and chocolate won’t cut it this time. No need to worry! Here are some healthy snack option ideas for your next party:
Citrus Shrimp Stuffed Avocados
-1/4 of a cup of greek yogurt
-3 tbsp lime juice
-2 tbsp orange juice
-1 cup grape tomatoes cut in half
-2 ripe avocados cut in half with pits removed
-1 bag of frozen bay shrimp
-sweet potato chips
-mix greek yogurt, lime & orange juice in a bowl
-thaw out shrimp
-sprinkle shrimp & tomatoes on top
-drizzle yogurt sauce and top with finely chopped cilantro (I don't love cilantro... it tastes like soap so I left it off lol)
-eat with sweet potato chips
This was my FAVORITE dish of the day. You have to try it!!
-2 medium zucchinis
-1 large egg
-1/2 cup grated pecorino cheese
-1/2 cup panko bread crumbs
-1 clove crushed garlic
-1/2 tsp black pepper
Heat oven to 400 degrees. Coat a large baking sheet with nonstick cooking spray. Shred zucchini and squeeze dry with a paper towel. Mix shredded zucchini with all other ingredients and scoop mixture onto the baking sheet. Shape into a small log and bake for 20 minutes turning the logs half way through.
-olive oil, garlic powder, parmesan cheese & salt
-cut up cauliflower into small nuggets
-toss in olive oil, parmesan cheese, garlic powder and salt
-roast at 475 degrees for 25 minutes (or until tender)
Serve in a cute little popcorn bag if you want to be extra (which we all do).
Watermelon, Feta and Cucumber Skewer
-whole square feta
-salt and pepper
-cube watermelon and Feta
-cut cucumber into slices
-assemble all of them onto a skewer stick
-season with salt and pepper
-drizzle balsamic glaze on top
This snack is so fresh and screams "Happy New Year! Let's all get our lives back together!!"
VEGGIES & DIPS
Roasted Artichoke with Caesar Dressing
-lemon, olive oil and salt
-wash and trim artichoke
-slice in half and cut out the center
-put on baking sheet
-squeeze lemon juice, drizzle olive oil, sprinkle salt (flip and do on both sides)
-cover with foil and roast for 35 minutes
-1 clove minced garlic
-3 tbsp lemon juice
-1 tsp dijon mustard
-1/2 tsp worchestershire
-2 tbsp olive oil
-1/4 cup parmesan
I feel like everyone hates artichokes when they are little, but news flash! We are adults and it is okay and encouraged to love these strange looking vegetables!!
Yogurt Dip with Snap Peas
-7 ounces of greek yogurt
-2 tbsp crumbled feta
-a finely chopped scallion
-2 tsp lemon juice
-chopped mint (optional)
Serve with snap peas or other fun veggies of your choice!
Carrots and Hummus
Bell Peppers and Guac
These two are pretty self explanatory. If you want to be fancy you can for sure make hummus and guac from scratch, but I'd probably just get them from the store. It will save you time and will taste pretty much the same.
